Why cant we choose our own crafts??

I have been noticed some crafts cant go with another craft so you have to take a new character to help you with that...
Cant we just choose our own crafts we like? Like scholar, coocking and farmer? You know... Something that fits in what you choose...
I want to ask this to on the dev. Team of lotro but i do not realy know how. So if anybody likes this idea pls reply and send this to Dev. team...
